THE VINEYARD
Sourced from one of the only known Arinto vineyards in McLaren Vale. The steep south facing aspect of this small block is well suited to this late ripening white variety of Portuguese origin.

WINEMAKING
A small parcel of fruit was split into two distinct ferments. The first spent a week fermenting on skins via wild ferment with gentle daily plunging before being very gently pressed off skins. This portion was then combined with the more traditionally handled stainless steel cold settled juice to ferment to complete dryness at very cold temperatures to retain varietal aromatics and freshness.

FOOD PAIRING
The heady exotic aromatics of this wine, combined with searing acidity and textural grip make it the perfect partner to freshly shucked oysters and other shellfish delights. The bold flavours will also hold up very well to spicy southeast Asian dishes.
